Baked Brie

Serves: 4–6 | Prep time: 30 minutes


1 (6-inch) wheel triple-crème brie


1 tablespoon unsalted butter


2 medium apples, sliced


½ cup fresh cranberries*


1 teaspoon pumpkin pie spice


½ teaspoon kosher salt


2 tablespoons real maple syrup


Fresh thyme for garnish (optional)


Crackers or baguette slices for serving


1. Preheat oven to 350°F.


2. Using a serrated knife, cut top rind (about ÂĽ inch) off brie; discard.


3. Set an oven-proof skillet (cast iron works well) over medium-high heat. Melt butter; sauté apples until slightly soft (about 5 minutes). Add cranberries; cook another 2 minutes. Sprinkle with pumpkin pie spice and salt.


4. Move apple and cranberry mixture to edge of the pan. Nestle brie into middle of fruit mixture; bake 12 to 15 minutes or until cheese is golden and bubbly.


5. Drizzle with maple syrup; sprinkle with thyme. Serve immediately with crackers or baguettes.


*If fresh cranberries aren’t in season, use frozen and thaw before use. If frozen aren’t available, dried can be used but reduce maple syrup to 1 tablespoon.
