Quick Microwave Tacos (Rachel Johnson)

Quick Microwave Tacos

Save time without losing flavor with this quick-and-easy weeknight dish.

TOTAL TIME: 10 minutes

MAKES: 4 servings

INGREDIENTS:

1 pound lean ground beef

1 package taco seasoning

1/2 teaspoon cornstarch

2 tablespoons water

For serving:

Crispy or hard taco shells

Shredded lettuce

Shredded cheese

Diced white or red onion

PREPARATION AND COOKING:

1. In a large, microwave-safe dish, break meat into small pieces; toss with the seasoning, cornstarch and water.

2. Cover with a microwave-safe plate; cook on high 3 to 4 minutes, stirring halfway through, breaking the meat into smaller pieces.

3. Continue cooking 2 minutes or until beef is no longer pink and fully cooked (it should register at least 165°F). You may have to adjust the total cooking time depending on the power of your microwave.

4. Allow meat to rest 5 minutes; gather your toppings. Assemble your tacos on the shells and enjoy.
