Harvest Salad (Rachel Johnson)

Harvest Salad

There's nothing like a fresh salad to accompany what's left of your holiday meal.

Serves: 4-6

Total Time: 10 minutes

SALAD:

1 (5-ounce) package spring mix

1 small apple, chopped

1/2 cup toasted pecans

1/2 cup crumbled feta cheese

1/2 cup pomegranate seeds

DRESSING:

1/3 cup extra-virgin olive oil

1/2 cup apple cider vinegar

1 tablespoon Dijon mustard

2 teaspoons maple syrup

1 tablespoon fresh thyme leaves

Salt and pepper to taste

PREPARATION:

1. In a large salad bowl, combine spring mix, apple, pecans, feta cheese and pomegranate seeds.

2. Combine olive oil and remaining ingredients in a jar with a lid; shake vigorously until dressing is emulsified.

3. Toss salad with preferred amount of dressing; serve.
