No-Bake Dessert

Fruit Tart Cups

Be the real fireworks at your next potluck with this easy fruit tart cup dessert. Use whatever berries look the best in your market or garden, and trim and chop them into bite-sized pieces.

Makes: 6 tart cups

Prep Time: 30 minutes

Total Time: 1 hour 30 minutes

Ingredients:

1 package vanilla pudding mix (3-ounce, Cook and Serve)

2 cups whole milk

1 teaspoon vanilla extract

1 pound fresh berries, washed and dried

1 tablespoon honey

1 teaspoon chopped fresh mint

8 ounces store-bought pound cake (vanilla or lemon)

Fresh mint leaves, for garnish

Directions:

1. Prepare vanilla pudding to package directions with milk.

Stir in vanilla; let chill until set in the fridge (about 20 minutes).

2. While pudding cools, toss berries, honey and mint in a small bowl; let marinate at least 15 minutes.

3. Cut pound cake into 1/2-inch squares. Wash and dry six (4-ounce) cups (clear plastic or glass preferred).

4. Spoon 1 tablespoon of pudding into bottom of each cup; top with a layer of cake and a layer of berries. Repeat layers once, ending with berries. Let chill at least 1 hour. Top with fresh mint leaves.
