Easy Dessert

Slow-Cooker Lava Cake

This cake starts from mixes, but tastes decadent and homemade. Don’t forget the ice cream. (DTN/Progressive Farmer image by Rachel Johnson)

With packed schedules and a long to-do list, dessert in the slow-cooker is a treat everyone will enjoy. This recipe starts from mixes and is as easy as throwing in the ingredients and walking away.

Serves: 6 to 8

Prep Time: 2 hours

1 (20-ounce) double chocolate brownie mix (such as Ghirardelli)

1 large egg

1/3 cup water

1/3 cup canola oil

1 (3.9-ounce) box chocolate pudding mix

2 cups cold whole milk

Cooking spray

1. Prepare brownie mix, egg, water and oil in a large bowl until smooth. Place pudding mix and cold milk in a bowl; whisk until smooth and thickened.

2. Coat the inside of a 4-quart slow cooker with cooking spray; turn on low. Add brownie batter, smoothing and leveling. Top with pudding, swirling slightly into the brownie batter.

3. Cook on low 2 hours or until edges are slightly set. Cake will not be completely solid, remember it’s a “molten” cake.

4. Scoop warm cake into bowls; top with ice cream or whipped cream.
