Creamy Broccoli Salad
Makes: 3-4 SERVINGS
Total Time: 15 MINUTES
1/2 cup full-fat Greek yogurt
2 tablespoons apple cider vinegar
2 teaspoons Dijon mustard
1 tablespoon honey
1/2 teaspoon kosher salt
1 pound broccoli, trimmed into bite-sized florets
1/2 firm avocado, diced
1/4 red onion, diced
2 tablespoons sunflower seeds
1. In a small bowl, whisk together yogurt, vinegar, mustard, honey, salt and 1 tablespoon water; set aside.
2. In a large serving bowl, toss broccoli florets, avocado and onion with the dressing; allow to sit 10 minutes. Top with sunflower seeds; serve.
