1 large egg, beaten

1 cup powdered sugar

2 tablespoons heavy cream

Pinch of kosher salt

Decorating sprinkles, if desired

PREPARATION AND COOKING:

1. Preheat oven to 400ÂşF; line a baking sheet with parchment paper.

2. To make filling: Combine jam or preserves and cornstarch; mix well.

3. To assemble pastries: Lightly dust a work surface with flour; roll out piecrusts evenly. Cut into eight rectangles (about 4 x 3 inches in size); make sure they're all the same shape.

4. Divide prepared filling onto four rectangles. Gently spread jam, leaving a 1-inch space around the borders of the dough. Don't overfill.

5. Brush egg wash around border; gently top each tart with remaining dough, creating a pocket.

6. Use a fork to gently press the edges of the pastry to secure. Prick the top of the pastries with a fork to vent steam.

7. Transfer pastries to the baking sheet; brush with leftover beaten egg. If pastries are too soft to handle, pop them in the freezer for a few minutes.

8. Bake pastries 15 minutes or until golden brown. Transfer to a cooling rack; allow to cool completely before icing.

9. To make icing: In a small bowl, combine powdered sugar, cream and salt. Spread mixture along top of the pastries; decorate with sprinkles, if desired.
