Cilantro Lime Corn on the Cob (Rachel Johnson)

Cilantro-Lime Corn on the Cob

A tangy cookout favorite, this side goes great with barbecue ribs.

TOTAL TIME: 15 minutes

MAKES: 4 servings

INGREDIENTS

3-4 ears of corn, shucked

1/4 cup mayonnaise

2 tablespoons fresh lime juice

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon kosher salt

Chopped fresh cilantro

Crumbled cotija cheese

Tajin seasoning or chili powder (optional)

Fresh lime wedges for serving (optional)

PREPARATION AND COOKING:

1. Preheat a skillet over medium-high heat, or prepare the grill.

2. Place ears of corn in the microwave for three minutes or until kernels start to turn bright yellow.

3. Transfer corn to hot skillet or grill, and sear until some of the kernels char (about two minutes on each side). Rotate corn until all sides have some charred kernels; set aside to cool slightly.

4. In a small bowl, combine mayonnaise, lime juice, garlic powder, onion powder and salt; stir well. Brush onto warm (not hot) corn.

5. Garnish with plenty of cilantro, cotija cheese, Tajin or chili powder, and more lime wedges. Serve immediately.
