Microwave Fruit Preserves (Rachel Johnson)

MICROWAVE FRUIT PRESERVES

This simple jam is the perfect way to enjoy the flavors of these waning days of summer.

TOTAL TIME: 10 Minutes

MAKES: About 1 1/2 cups jam

Ingredients:

2 cups (10 ounces) fresh or frozen raspberries, blueberries or chopped strawberries

1/4 cup sugar

Juice of 1/2 lemon

1 small lemon, zested

Preparation and Cooking:

1. In a large glass bowl, combine berries, sugar and lemon juice. Make sure the glass bowl is larger than the amount of berries; this jam will bubble up in the microwave, and you don't want spillover.

2. Microwave on full power for about 9 to 10 minutes. The jam will be ready when the mixture is thick, shiny and broken down. It will thicken as it cools.

3. Allow jam to cool to room temperature (about 15 minutes). Stir in lemon zest; transfer to an airtight container.

4. Store jam in the fridge; enjoy for about a month.
