Pasta with No-Cook Tomato Sauce

This quick-and-easy weeknight meal will keep your family coming back for more.

TOTAL TIME: 20 MINUTES

MAKES: 4-6 SERVINGS

4 cups chopped tomatoes

1/2 cup fresh basil, minced

2 tablespoons olive oil

2 large garlic cloves, minced

3 tablespoons fresh lemon juice

1/2 teaspoon salt, plus more to taste

1/2 pound spaghetti or linguine, cooked according to package instructions

2 tablespoons butter, cut into small pieces

Parmesan cheese, for serving

Red pepper flakes (optional)

1. In a large bowl, combine tomatoes, basil, olive oil, garlic, lemon juice and salt; toss to coat. Let stand at room temperature until juices are released from tomatoes (about 20 minutes).

2. Cook pasta according to package instructions. When pasta is almost ready, add butter to tomato mixture. Using tongs, transfer hot pasta directly to sauce (some pasta water is OK), tossing to melt butter and incorporate sauce.

3. Serve with cheese and red pepper flakes, if desired.
