Honey-Glazed Carrots

Rainbow carrots or parsnips also work well and will add even more color to your table.

MAKES: 4-5 SERVINGS

TOTAL TIME: 45 MINUTES

3 tablespoons butter, melted

2 tablespoons honey

1 tablespoon fresh rosemary, finely chopped

1 teaspoon garlic powder

1 teaspoon kosher salt

2 pounds carrots, peeled and halved

Fresh thyme, for garnish

1/2 teaspoon fresh orange zest, for garnish

Freshly cracked black pepper, for garnish

1. Preheat oven to 400 degrees F.

2. In a large bowl, mix melted butter, honey, rosemary, garlic powder and salt. Toss carrots in butter mixture; coat evenly.

3. Roast carrots until caramelized and glazed (about 30 to 40 minutes).

4. Garnish with thyme, orange zest and cracked black pepper.
