Seared Steaks With Blue Cheese Butter

Topping a perfectly seared steak with a pat of this decadent butter is sure to make any dinner a special occasion.

Serves: 2

Total Time: 40 minutes

Butter:

1/4 cup unsalted butter, softened

1 ounce crumbled blue cheese

2 green onions, chopped

1 garlic clove, crushed

1/2 teaspoon kosher saltCombine all ingredients; mash with a fork. Lay a sheet of plastic wrap on a clean surface; spoon butter mixture into the center. Fold plastic in half; roll butter into a log, twisting the edges of the plastic wrap. Chill at least 15 minutes.

Sear the Steaks:

1 tablespoon vegetable oil

2 prime rib eye or New York strip steaks (at least 1 1/2 inches thick), room temperature

Kosher salt

Freshly cracked black pepper1. Preheat oven to 400°F. Heat oil in a large cast-iron skillet (or other oven-proof skillet) over medium-high heat. Pat steaks dry with paper towels; season each side generously with salt and pepper.

2. If steaks have a fat cap (a thick layer of fat on the edge), place steak onto the pan fat side first, holding in place with tongs. Render fat at least 2 minutes or until golden and crispy. Add oil to pan; lay steaks flat, cooking until a dark crust has formed (about 5 to 7 minutes per side).

3. Cover loosely with aluminum foil; let rest at least 10 minutes.

4. Slice steak across the grain; serve with a pat of Blue Cheese Butter on top.
