Spooky Ghost Cupcakes (Rachel Johnson)

SPOOKY GHOST CUPCAKES

Take it easy this Halloween. Jazz up a boxed cake mix with homemade frosting to make these adorable treats.

1 package boxed cupcake or cake mix (your choice of flavor)

1 cup (2 sticks) unsalted butter, at room temperature

3 cups confectioners' sugar (plus more, if needed)

1 1/2 teaspoons vanilla extract

1/4 teaspoon kosher salt

1 tablespoon whole milk

Candy eyeballs

PREPARATION:

1. Prepare cupcakes according to package instructions.

2. While cupcakes cool, add butter to the bowl of a stand mixer or a bowl fitted with a hand mixer; whip until light and fluffy. Add sugar; beat until smooth.

3. Add vanilla, salt and milk. Beat an additional 5 minutes or until frosting is smooth and fluffy. Add more sugar by 1/4-cup increments if frosting is too soft.

4. To decorate cupcakes, add frosting to a piping bag fitted with a 1/4-inch round tip. Pipe a swirl of frosting on top of each cupcake; add two candy eyeballs to decorate.
