Morning Avocado Toast
A great breakfast can be as easy as toast.
MAKES: 2 SERVINGS
TOTAL TIME: 10 MINUTES
1 large ripe avocado
1/2 fresh lemon, juiced
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 slices fresh sourdough bread
1 whole clove garlic (optional)
2 large eggs, hard-boiled and halved
Optional Toppings: olive oil, red pepper flakes, parsley, flaky sea salt
1. In a bowl, combine avocado, lemon juice, salt and pepper. Gently mash with the back of a fork to desired consistency; set aside.
2. Toast bread to desired doneness.
Optional: Rub both sides of bread with a raw garlic clove.
3. Top bread with mashed avocado mixture and boiled eggs.
4. Finish with a drizzle of olive oil, sprinkle of red pepper or salt, and parsley (if desired).
