Strawberry-Mint Lemonade

Fresh, crisp and cool, this homemade favorite is perfect for those hot summer days.

STRAWBERRY-MINT LEMONADE

MAKES: 6 CUPS

TOTAL TIME: 1 HOUR, 15 MINUTES

1/2 pound fresh strawberries (about 1 1/2 cups), trimmed and halved

1/4 cup fresh mint leaves plus more sprigs for serving

1 1/2 cups fresh lemon juice

1 cup granulated sugar (or more to taste)

1 1/2 cups boiling water

2 cups cold water

1 large lemon, sliced into half moons to serve

Ice

1. Puree strawberries, mint leaves and 1/4 cup lemon juice in a blender or food processor until smooth; run puree through a fine-mesh sieve, pressing with back of a spoon to catch any seeds. Set strawberry mixture aside to chill.

2. Put sugar in a large serving pitcher; add boiling water, stirring vigorously until sugar dissolves. Add remaining lemon juice, water and strawberry mixture. Add more sugar, if desired, for taste.

3. Allow lemonade to chill at least 1 hour before serving. To chill quickly, cut cold water to 1 cup and fill pitcher with ice. Serve glasses with lemon slices and mint sprigs.
