Enjoy these sweet, tangy treats for a healthy twist on the ice cream truck favorite.

Makes: 10 ice pops

Prep Time: 10 minutes

Chill Time: 6–8 hours

1 (12-ounce) container orange juice concentrate, thawed

2 cups vanilla bean Greek yogurt

1 (15-ounce) can mandarin oranges in light syrup, drained

1. In a mixing bowl (or large liquid measuring cup), combine orange juice concentrate and yogurt; stir until smooth.

2. Drop two or three mandarin orange segments into each of 10 ice pop molds. (The molds we used hold 3 ounces each.)

3. Top with even amounts of filling, tapping mold gently on counter to evenly fill and release air bubbles.

4. Freeze until pops are solid (about 6 hours). Run molds under hot water to release pops.
