Chopped Cabbage Coleslaw

This fresh and tangy side pairs perfectly with barbecue.

MAKES: 6-8 SERVINGS

TOTAL TIME: 10 MINUTES

1 cup mayonnaise

1/4 cup chopped fresh cilantro

2 tablespoons apple cider vinegar

1 tablespoon spicy brown mustard

1 tablespoon maple syrup

1/4 teaspoon sea salt

3 cups chopped broccoli stems*

2 cups small broccoli florets*

1 cup julienned carrots*

1 cup chopped red cabbage*

1/4 cup thinly sliced red onion

PREPARATION:

1. Combine mayo, cilantro, vinegar, mustard, maple syrup and salt in a large bowl; whisk well. Add broccoli stems, florets, carrots, cabbage and onion; toss to coat.

2. Allow to sit 10 minutes at room temperature before serving.
